Weigh in day!!

Well its weigh in day again. I wasn't confident about getting a loss because i was bad at the weekend. Had a subway at Meadow hall (one of the healthiest choices i thought!) and nibbled on chicken nuggets and jelly babies on Sunday night!!

So i was surprised to have a 1 lb loss today making me 13 st 8lbs Making my total loss 1/2 a stone!!


Not an official award as i don't go to class  but it there to spur me on.

So This week is a new start yet again, I have to be good!!

Meals this week will include:

  • Spaghetti bolognese - made with quorn
  • Bolognese with something like SW chips or mash
  • BBQ chicken melt
  • curry
  • Pizza and SW chips (unsure what way to make the pizza yet though)
  • Taco tray fajitas
  • chinese chicken
  • baked bean lasange
Obviously some of these will go into next week. Had the quorn spag bol tonight and it was lovely. My 5 year old daughter loves it. She messes her food a lot but she scoffed a massive bowl full!!

Heres the recipe i use, other people add mushrooms, peppers etc but im not that bothered for them so leave them out.

Serves - 4 (i make this amount and save some for the following day or i freeze it)

Ingredients


500g Extra lean mince meat or quorn mince
2 x 400g Tins of chopped tomatoes with added herbs such as basil (or i used passata)
1 tbsp oregano
1 tbsp tomato puree (forgot to add this tonight!)
Approx 5 rashes of bacon, all visible fat removed, cut up into bite size pieces
1 Onion, chopped
Garlic (i use garlic granules and add 2 tsp)
beef stock cube
fry light

Spaghetti to serve it with

Method

Fry the onion, bacon and garlic in a pan using fry light until cooked.
Add the Mince meat/quorn mince and cook through until brown
Sprinkle over the beef stock cube and stir thoroughly
Add the chopped tomatoes, tomato puree and oregano.
Leave to simmer for 20-30 mins
Serve with spaghetti

Bloody gorgeous it was!!

Tomorrows tea time meal is Taco tray fajitas. These are made with my own made fajita spices, to save on syns on a ready made shop bought pack, taco trays and little gem lettuce. I cant wait!!
